Factory acceptance testing verifies whether newly manufactured equipment meets the agreed technical requirements before shipment. For industrial bakery machinery, the test should examine construction, operation, controls, safety, documentation, and simulated production conditions. A machine that powers on successfully has not necessarily demonstrated the capacity, synchronization, hygiene, or reliability required for the buyer’s factory.
Start With the Approved Specification
The acceptance plan should be prepared before testing begins. Purchase contracts, technical agreements, approved drawings, equipment lists, and control descriptions form the reference standard. Any differences should be recorded and resolved rather than accepted through verbal explanations.

Mechanical Construction and Hygiene
Inspect dimensions, conveyor widths, inlet and outlet heights, support frames, leveling points, guards, access doors, and maintenance clearances. These details determine whether the equipment can connect correctly after arrival.
Food-contact surfaces should be smooth, accessible, and suitable for the intended cleaning method. Weld quality, internal corners, drainage, removable components, and possible residue traps deserve careful attention. External appearance is important, but hidden product-contact areas have greater influence on hygiene.
The inspection should also confirm materials stated in the agreement. Component labels, surface finishes, belt types, motors, bearings, and sensors must match the approved configuration.
Functional and Performance Testing
Every movement should be tested in manual and automatic modes where applicable. Conveyors must run through their required speed range without abnormal vibration, belt drift, rubbing, or unstable product transfer.
Performance checks may include output per hour, temperature stability, dosing accuracy, residence time, transfer quality, energy demand, and product rejection. When actual dough or baked products are unavailable, the limitations of simulation should be recorded clearly.
Testing should continue long enough to reveal heat buildup, sensor drift, recurring alarms, and mechanical problems. A short demonstration may not represent continuous bakery operation.
Control Logic and Line Communication
The control test should verify recipes, speed settings, user permissions, alarm history, sensor responses, and recovery after power interruption. Emergency stops, guards, and interlocks must operate as designed.
For a complete line, FAT should simulate upstream and downstream conditions. The test needs to show what happens when a conveyor stops, products accumulate, a sensor fails, or packaging cannot accept more output.
Buyers should confirm electrical standards, voltage, frequency, cabinet labeling, cable identification, and communication interfaces. Software backups and access procedures should be included in the handover package.
Documentation and Shipment Readiness
Effective bakery equipment acceptance testing continues beyond machine operation. Documentation should include:
